  • 200 grams Ladyfingers (savoiardi)
  • 6 large Egg yolks
  • 150 grams Granulated sugar
  • 500 milliliters Whole milk
  • 200 milliliters Heavy cream (whipping cream)
  • 40 grams All-purpose flour
  • 20 grams Cocoa powder (unsweetened)
  • 1 teaspoon Vanilla extract
  • 120 milliliters Alchermes liqueur (or substitute with grenadine or diluted cranberry juice)
  • 50 grams Unsweetened dark chocolate (for optional decoration)

Directions

Step 1

In a medium mixing bowl, whisk the egg yolks and granulated sugar together until the mixture is pale and creamy.

Gradually sift the flour into the egg mixture while whisking to avoid lumps. Set aside.

In a saucepan, heat the milk and heavy cream over medium heat until just simmering. Remove from heat and slowly pour the hot mixture into the egg mixture, whisking continuously to combine.

Pour the custard mixture back into the saucepan and cook over low heat, stirring constantly until it thickens, about 5-7 minutes. Be careful not to let it boil. Remove from heat and stir in the vanilla extract.
