Ingredients

  • 2 medium-sized (grated) zucchini
  • 1 cup wheat germ
  • 1 cup breadcrumbs
  • 1 large egg
  • 0.5 cup (grated) parmesan cheese
  • 1 clove (minced) garlic
  • 0.5 medium-sized (finely chopped) onion
  • 2 tablespoons (chopped) parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons (for frying) olive oil
  • 4 burger buns
  • 4 leaves lettuce
  • 1 large (sliced) tomato
  • 4 tablespoons mayonnaise or preferred sauce

Directions

Step 1

Grate the zucchini into a bowl. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture until dry.

Step 2

In a mixing bowl, combine the grated zucchini, wheat germ, breadcrumbs, egg, parmesan cheese, garlic, onion, parsley, salt, and black pepper. Mix well until the mixture comes together.

Shape the mixture into 4 equal-sized patties, about 1/2 inch thick.

Step 4

Heat olive oil in a large skillet over medium heat. Add the zucchini patties and cook for 4-5 minutes on each side, or until golden brown and cooked through.

Step 5

Toast the burger buns if desired. Spread a layer of mayonnaise or your preferred sauce on the bottom half of each bun.

Step 6

Place a cooked zucchini burger patty on each prepared bun. Top with a lettuce leaf, tomato slice, and the top bun.

Serve immediately and enjoy your Zucchini Wheat Germ Burgers!
