  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 6 pieces Corn tortillas
  • 1 cup Refried beans
  • 1 cup Shredded lettuce
  • 1 cup Diced tomatoes
  • 0.5 cup Shredded cheese (cheddar or Mexican blend)
  • 0.25 cup Sour cream
  • 2 tablespoons Chopped cilantro
  • 2 teaspoons Hot sauce

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and slice the zucchinis into thin rounds, approximately 1/4 inch thick.

Step 3

In a mixing bowl, toss the zucchini slices with olive oil, ground cumin, smoked paprika, garlic powder, salt, and black pepper until evenly coated.

Step 4

Spread the seasoned zucchini slices onto a baking sheet in a single layer. Roast in the preheated oven for 15 minutes, flipping halfway through, until tender and lightly browned.

While the zucchini is roasting, place the corn tortillas on another baking sheet. Lightly brush both sides of the tortillas with olive oil and bake in the oven for 5-7 minutes or until they are crispy and golden brown.

Step 6

Heat the refried beans in a small saucepan or microwave until warm and spreadable.

Step 7

To assemble the tostados, spread a layer of refried beans onto each crispy tortilla.

Step 8

Top each tostado with a layer of roasted zucchini slices, followed by shredded lettuce, diced tomatoes, and shredded cheese.

Step 9

Add a dollop of sour cream and a drizzle of hot sauce on top of each tostado. Garnish with chopped cilantro.

Step 10

Serve immediately and enjoy!
