Ingredients

  • 4 medium zucchini
  • 4 medium tomatoes
  • 1 medium onion
  • 2 cloves garlic cloves
  • 2 tablespoons olive oil
  • 1 cup breadcrumbs
  • 1 cup Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and slice the zucchini and tomatoes into 1/4-inch thick rounds. Set aside.

Step 3

Peel and finely dice the onion. Mince the garlic cloves.

Step 4

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.

In a small bowl, mix breadcrumbs, Parmesan cheese, oregano, and basil. Drizzle in 1 tablespoon of olive oil and stir until combined. Set aside.
