Ingredients

  • 2 cups All-purpose flour

  • 2 large Eggs
  • 0.5 cup Vegetable oil
  • 0.5 cup Plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1.5 cups Zucchini, grated
  • 0.5 cup Chopped walnuts or pecans (optional)
  • 0.5 cup Raisins or dried cranberries (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal.

In a large mixing bowl, whisk together all-purpose flour, granulated sugar, light brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined.
