  • 2 medium Zucchini
  • 1 large Russet potato
  • 1 large Egg
  • 0.75 cup Panko breadcrumbs

Directions

Step 1

Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper and lightly greasing it with olive oil or nonstick spray.

Grate the zucchini using a box grater, then place it in a clean kitchen towel or cheesecloth. Squeeze out as much excess liquid as possible. Transfer the zucchini to a large mixing bowl.
