  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a baking dish and set it aside.

Wash the zucchini and cut them in half lengthwise. Using a spoon, carefully scoop out the center to create 'boats,' leaving a 1/4-inch border. Chop the scooped-out flesh and set aside.
