Ingredients

  • 3 medium-sized zucchini
  • 1 medium-sized onion
  • 2 large garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika

  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice

Directions

Step 1

Wash the zucchinis thoroughly and grate them using a box grater (skin on is fine). Place the grated zucchini in a colander and sprinkle with a pinch of salt. Let it sit for 10 minutes to release excess water, then squeeze out as much liquid as possible.

Step 2

Peel and finely dice the onion. Mince the garlic cloves.

Step 3

Heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic to the skillet and cook for another 1 minute until fragrant.

Add the grated zucchini to the skillet and stir well. Cook for about 10-12 minutes, stirring occasionally, until the zucchini has softened and most of the moisture has evaporated.
