Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 2 cups Cherry tomatoes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Red pepper flakes
  • 0.25 cups Parmesan cheese
  • 2 tablespoons Fresh basil leaves

Directions

Step 1

Wash the zucchinis and trim the ends. Use a spiralizer to create zucchini noodles (zoodles). Set aside.

Step 2

Heat olive oil in a large skillet over medium heat.

Step 3

Mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Add the cherry tomatoes (cut in half if desired) to the skillet. Cook for 5-6 minutes, stirring occasionally, until the tomatoes begin to break down and release their juices.

Step 5

Season the tomato mixture with salt, black pepper, and red pepper flakes. Stir well to combine.

Step 6

Increase the heat slightly and add the zucchini noodles to the skillet. Toss gently to coat the zoodles in the tomato sauce.

Step 7

Cook for 2-3 minutes, just until the zucchini noodles are slightly tender but still have a bit of crunch (do not overcook to avoid sogginess).

Step 8

Remove from heat and sprinkle grated Parmesan cheese over the top.

Step 9

Garnish with freshly chopped basil leaves before serving.

Step 10

Serve immediately as a main dish or as a healthy side. Enjoy!
