Ingredients

  • 1 lb Ground beef
  • 1 medium (grated) Zucchini
  • 2 minced Garlic cloves
  • 0.5 cup Breadcrumbs
  • 1 large Egg
  • 1 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Olive oil
  • 0.75 cup Salsa
  • 4 Burger buns
  • 4 leaves Lettuce
  • 4 Cheddar cheese slices (optional)

Directions

Step 1

1. Preheat a grill or stovetop grill pan over medium-high heat.

Step 2

2. In a large mixing bowl, combine the ground beef, grated zucchini, minced garlic, breadcrumbs, egg, ground cumin, salt, and black pepper. Mix gently but thoroughly until all ingredients are evenly incorporated.

Step 3

3. Divide the mixture into 4 equal portions and shape them into burger patties about ¾ inch thick.

Step 4

4. Brush each patty lightly with olive oil to prevent sticking while cooking.

Step 5

5. Place the patties on the preheated grill or grill pan and cook for about 4–5 minutes per side, or until the internal temperature reaches 160°F (71°C) for medium doneness.

Step 6

6. If using cheddar cheese, place one slice on each patty during the last minute of cooking to let it melt.

Step 7

7. Toast the burger buns on the grill for 1–2 minutes until golden brown, if desired.

Step 8

8. Spread a spoonful of salsa on the bottom half of each bun. Place a lettuce leaf on top, followed by the cooked patty.

Step 9

9. Add another spoonful of salsa on top of the patty, then finish with the top half of the bun.

Step 10

10. Serve immediately and enjoy your fresh and juicy zucchini salsa burger!
