Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 garlic cloves
  • 1 28-ounce can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup parmesan cheese
  • 1 cup mozzarella cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the zucchinis and slice them into 1/4-inch thick rounds. Set them aside.

Step 3

Heat the olive oil in a large skillet over medium heat.

Step 4

Dice the onion finely and add it to the skillet. Sauté for 3-4 minutes until translucent.

Step 5

Mince the garlic cloves and add them to the skillet. Cook for 1 minute until fragrant.

Step 6

Pour the crushed tomatoes into the skillet and stir with the onions and garlic.

Step 7

Add the dried oregano, dried basil, salt, and black pepper to the tomato sauce. Simmer for 10 minutes to allow the flavors to meld.

Step 8

Spread a thin layer of tomato sauce on the bottom of a baking dish. Arrange a single layer of zucchini slices on top of the sauce.

Step 9

Sprinkle a small amount of parmesan cheese over the zucchini layer, then spoon more tomato sauce on top. Repeat this process until all zucchini slices, sauce, and parmesan are used.

Step 10

Finish with an even layer of mozzarella cheese on top.

Step 11

Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and golden brown.

Step 12

Remove from the oven and allow the dish to cool for 5 minutes before serving.

Step 13

Serve warm and enjoy your Zucchini Milano!
