Ingredients

  • 3 medium zucchini
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1.5 cups cherry tomatoes
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash all vegetables thoroughly. Pat them dry with a clean kitchen towel.

Step 2

Slice the zucchini into 1/4-inch thick rounds. Halve the rounds if the zucchini is large.

Step 3

Core and remove the seeds from both the red and yellow bell peppers. Cut them into thin strips.

Halve the cherry tomatoes. Mince the garlic cloves finely.
