Ingredients

  • 1 pound Ground beef
  • 0.5 pound Ground pork
  • 1 medium Zucchini
  • 1 small Onion
  • 2 Garlic cloves
  • 0.5 cup Breadcrumbs
  • 1 Egg
  • 0.25 cup Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons Milk
  • 0.25 cup Ketchup (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a standard loaf pan or line it with parchment paper.

Step 2

Grate the zucchini using a box grater and place it in a clean kitchen towel or paper towel. Squeeze out as much excess moisture as possible and set aside.

Step 3

Finely chop the onion and mince the garlic cloves.

Step 4

In a large mixing bowl, combine the ground beef, ground pork, shredded zucchini, chopped onion, minced garlic, breadcrumbs, egg, ketchup, Worcestershire sauce, salt, black pepper, Italian seasoning, and milk.

Step 5

Using clean hands or a spoon, mix the ingredients until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 6

Transfer the mixture to the prepared loaf pan and shape it into an even loaf, pressing it gently into place.

Step 7

Spread the additional 1/4 cup of ketchup evenly over the top of the meatloaf for a glossy glaze.

Step 8

Bake in the preheated oven for 55-60 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 9

Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

Step 10

Serve warm with your favorite sides, such as mashed potatoes or a green salad.
