Ingredients

  • 1 pound Ground beef
  • 0.5 pound Ground pork
  • 1 medium Zucchini
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 0.75 cup Breadcrumbs
  • 2 large Eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Ketchup
  • 1 tablespoon Brown sugar
  • 1 teaspoon Dijon mustard

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it with oil.

Step 2

Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. Set aside.

Step 3

Finely chop the onion and mince the garlic cloves.

Step 4

In a large mixing bowl, combine the ground beef, ground pork, grated zucchini, onion, garlic, breadcrumbs, eggs, Worcestershire sauce, Italian seasoning, salt, and black pepper. Mix until all ingredients are evenly incorporated, but avoid overmixing to keep the meatloaf tender.

Step 5

Transfer the meat mixture into the prepared loaf pan and press it down gently to form an even surface.

Step 6

In a small bowl, prepare the glaze by mixing the ketchup, brown sugar, and Dijon mustard. Spread the glaze evenly over the top of the meatloaf.

Step 7

Bake the meatloaf in the preheated oven for 55-60 minutes or until the internal temperature reaches 160°F (71°C).

Step 8

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

Step 9

Serve warm with your favorite sides like mashed potatoes or steamed vegetables.
