Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 28 ounces crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley
  • 0.25 cup shredded Parmesan cheese

Directions

Step 1

Wash the zucchini and trim the ends. Use a spiralizer to create zucchini noodles ('zoodles'), or use a vegetable peeler to shave into thin ribbons if you don’t have a spiralizer. Set aside.

Step 2

Mince the garlic cloves finely.

Step 3

In a large skillet, heat the olive oil over medium heat.

Step 4

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 5

Stir in the crushed tomatoes, dried basil, dried oregano, red pepper flakes, salt, and black pepper. Simmer the marinara sauce for 10-12 minutes, stirring occasionally, until thickened slightly.

Step 6

While the sauce is simmering, lightly sauté the zucchini noodles. Heat another skillet over medium heat and drizzle with a small amount of olive oil. Add the zucchini and cook for 2-3 minutes, tossing gently, just until slightly softened. Do not overcook to prevent them from becoming mushy.

Step 7

Once the marinara sauce is ready, taste and adjust seasoning if necessary.

Step 8

Combine the zucchini noodles with the marinara sauce in the skillet and toss to coat evenly.

Step 9

Sprinkle with fresh parsley and shredded Parmesan cheese before serving.

Step 10

Serve immediately as a main dish or side, and enjoy!
