Ingredients

  • 4 medium-sized zucchini
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 1 cup grated Gruyère cheese
  • 0.5 cups grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 teaspoon olive oil
  • 0.5 cups panko breadcrumbs
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C). Grease an 8x8-inch (20x20 cm) baking dish with a small amount of olive oil and set aside.

Wash the zucchinis and slice them into 1/4-inch thick rounds. Set aside.

In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly for 1-2 minutes to cook the raw taste out of the flour.
