Ingredients

  • 4 medium zucchini
  • 1 teaspoon salt
  • 2 tablespoons olive oil

  • 2 cloves (minced) garlic
  • 1 cup crumbled feta cheese

  • 2 tablespoons (chopped) fresh parsley
  • 2 tablespoons (chopped) fresh dill
  • 0.5 cup panko breadcrumbs
  • 0.25 cup (grated) parmesan cheese
  • 1 tablespoon (melted) butter
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Slice the zucchini into thin, even rounds (about 1/4 inch thick).

Place the zucchini slices in a colander and toss them with 1 teaspoon of salt to draw out excess moisture. Let them sit for 10 minutes, then pat dry with a clean kitchen towel or paper towels.
