Ingredients

  • 2 medium (about 2 cups shredded) zucchini
  • 6 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup (finely diced) yellow onion
  • 1 teaspoon minced garlic
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon (or as needed for greasing) olive oil or cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or a similar-sized baking dish with olive oil or cooking spray.

Step 2

Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. Transfer to a large mixing bowl.

Step 3

In the same bowl with the zucchini, add the finely diced onion, minced garlic, shredded cheddar cheese, and grated Parmesan cheese. Stir to combine.

Step 4

In a separate mixing bowl, whisk together the eggs, milk, all-purpose flour, baking powder, salt, and black pepper until well combined and smooth.

Step 5

Pour the egg mixture into the zucchini mixture and stir until everything is evenly distributed.

Step 6

Transfer the mixture into the prepared pie dish, spreading it out evenly with a spatula.

Step 7

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the quiche is set in the center. A toothpick inserted in the middle should come out clean.

Step 8

Remove the quiche from the oven and let it cool for 5-10 minutes before slicing and serving.

Step 9

Serve warm or at room temperature. Enjoy!
