Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder

  • 0.5 cups Unsalted butter
  • 1 cup Granulated sugar
  • 0.5 cups Brown sugar (packed)
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 1.5 cups Zucchini (shredded, packed and squeezed to remove excess moisture)
  • 0.25 cups Strong brewed coffee
  • 1 cup Powdered sugar
  • 2 tablespoons Milk
  • 0.5 teaspoons Instant coffee granules

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper.

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Set this dry mixture aside.

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.
