  • 2 large eggs

Directions

Step 1

Grate the zucchini using a box grater or food processor and place it in a large bowl.

Sprinkle the zucchini with 1 teaspoon of salt and mix it well. Let it sit for 10 minutes to draw out excess water.

After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze the zucchini, removing as much liquid as possible. Transfer the dry zucchini to a clean bowl.
