  • 4 medium zucchini
  • 1 teaspoon salt

  • 1 cup oat bran
  • 1 cup low-fat cottage cheese

  • 1 cup shredded cheddar cheese
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon paprika
  • 2 tablespoons, chopped parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x9-inch (or similar) casserole dish with olive oil or cooking spray.

Wash and trim the zucchini, then shred it using a box grater or food processor. Place the shredded zucchini in a colander, sprinkle with 1 teaspoon of salt, and let it sit for 10 minutes to draw out excess moisture.
