Ingredients

  • 3 medium zucchini
  • 3 tablespoons olive oil
  • 2 cups cherry tomatoes
  • 2 cloves garlic
  • 1 cup fresh basil leaves
  • 1 tablespoon balsamic vinegar
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons parmesan cheese (optional, for garnish)

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

Wash and slice the zucchinis lengthwise into 1/4-inch thick strips.

Step 3

Brush both sides of the zucchini slices with 2 tablespoons of olive oil and sprinkle with a pinch of salt and pepper.

Step 4

Grill the zucchini slices for 3-4 minutes on each side, or until they are tender and have nice grill marks. Remove them from the grill and set aside to cool slightly.

Step 5

While the zucchini is grilling, prepare the bruschetta topping. Dice the cherry tomatoes into small pieces and place them in a medium mixing bowl.

Step 6

Mince the garlic cloves finely and add them to the bowl with the tomatoes.

Step 7

Chop the fresh basil leaves into small pieces and add them to the tomato mixture.

Step 8

Add 1 tablespoon of olive oil, the balsamic vinegar, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the tomato mixture. Stir well to combine.

Step 9

Arrange the grilled zucchini slices on a serving platter. Spoon the tomato and basil mixture evenly onto each slice.

Step 10

If desired, sprinkle each piece with a little grated parmesan cheese for added flavor.

Step 11

Serve immediately as an appetizer or a light side dish. Enjoy!
