Ingredients

  • 4 medium zucchini
  • 3 tablespoons unsalted butter
  • 1 small, diced yellow onion
  • 2 minced garlic cloves
  • 3 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 1.25 cups grated Gruyère cheese
  • 0.5 cups grated Parmesan cheese
  • 0.5 cups breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons, chopped (optional) fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease an 8x8-inch baking dish with butter or nonstick spray.

Using a mandoline or a sharp knife, slice the zucchini into thin, even rounds (about 1/8 inch thick). Set them aside.

In a medium saucepan over medium heat, melt 3 tablespoons of butter. Add the diced onion and cook until softened, about 3–4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
