Ingredients

  • 2 medium Zucchini
  • 3 medium Tomatoes
  • 3 tablespoons Olive oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash the zucchini and tomatoes thoroughly. Trim the ends off the zucchini and dice into small cubes. Core the tomatoes and dice into small pieces.

Step 2

Peel and finely chop the onion and garlic.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened and fragrant.

Step 4

Add the diced zucchini to the skillet and stir well. Cook for 8-10 minutes, stirring occasionally, until the zucchini starts to soften.

Step 5

Add the diced tomatoes, salt, black pepper, and smoked paprika to the skillet. Stir everything together, cover, and let it cook over low heat for 20 minutes. Stir occasionally to prevent sticking.

Step 6

Remove the lid and increase the heat to medium. Cook for another 5 minutes, stirring occasionally, to let any excess liquid evaporate. The mixture should be thick and spreadable.

Turn off the heat and let the mixture cool slightly. Stir in the lemon juice and chopped parsley.
