Ingredients

  • 3 large zucchini
  • 250 grams cooked spaghetti or noodles
  • 4 large eggs
  • 100 grams cheddar cheese, grated
  • 50 grams parmesan cheese, grated
  • 50 grams all-purpose flour
  • 100 milliliters milk
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley or basil, chopped (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a rectangular baking dish (approximately 20x30 cm) with a little bit of olive oil or line it with parchment paper.

Step 2

Grate the zucchini using the large holes of a box grater. Place the grated zucchini into a clean kitchen towel, squeeze out the excess moisture, and set aside.

Step 3

In a large mixing bowl, whisk together the eggs and milk until well combined.

Step 4

Add the flour and baking powder to the egg mixture and whisk until smooth.

Step 5

Stir in the grated cheddar cheese, half of the parmesan cheese, salt, and black pepper.

Step 6

In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes, until softened. Add the minced garlic and cook for another 1 minute, stirring often to avoid burning.

Step 7

Add the cooked onion and garlic to the mixing bowl with the egg mixture, along with the prepared zucchini and cooked spaghetti or noodles. Gently mix until fully combined.

Step 8

Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining parmesan cheese on top.

Step 9

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the slice is set in the center.

Step 10

Remove from the oven and let cool for 10 minutes before slicing into portions.

Step 11

Garnish with fresh parsley or basil, if desired, and serve. Enjoy your zucchini and noodle slice hot or at room temperature!
