Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 3 large, minced garlic cloves
  • 0.5 teaspoons red chili flakes
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons, chopped fresh parsley
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 3 tablespoons, grated (optional) parmesan cheese

Directions

Step 1

Wash the zucchini thoroughly and trim off the ends. Cut each zucchini into thin slices (about 1/4-inch thick rounds).

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and red chili flakes to the skillet, and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

Step 4

Add the sliced zucchini to the skillet and toss to coat in the flavored oil. Sprinkle with salt and black pepper.

Step 5

Cook the zucchini for 6-7 minutes, stirring occasionally, until it becomes tender but retains a slight bite.

Step 6

Remove the skillet from heat. Stir in the fresh lemon juice, lemon zest, and chopped parsley.

Step 7

Taste and adjust seasoning, if needed. For an extra layer of flavor, sprinkle grated parmesan cheese over the zucchini if desired.

Step 8

Serve warm as a side dish or enjoy with crusty bread for a light meal.
