Ingredients

  • 1 pound ground beef
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 large carrot, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 14.5 ounces diced tomatoes (canned, with juice)
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 medium red bell pepper, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 2 medium potatoes, peeled and diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon paprika
  • 0.5 teaspoon hot sauce (optional)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large soup pot or Dutch oven, heat olive oil over medium heat. Add ground beef, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Remove beef from the pot with a slotted spoon and set aside.

Step 2

In the same pot, add the diced onion, carrots, and celery. Cook for 5-6 minutes, stirring occasionally, until the vegetables begin to soften.

Step 3

Add the minced garlic and cook for 1 more minute, stirring, until fragrant.

Step 4

Stir in the tomato paste and cook for 2 minutes to deepen its flavor.

Step 5

Add the diced tomatoes (with their juice), beef broth, potatoes, bell pepper, green beans, Worcestershire sauce, Italian seasoning, paprika, and the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Bring the mixture to a boil.

Step 6

Once boiling, reduce the heat to medium-low and add the cooked ground beef back into the pot. Cover and simmer for 20-25 minutes, or until the potatoes are tender.

Step 7

Taste the soup and adjust the seasoning as needed. For extra heat, add optional hot sauce.

Step 8

Ladle the soup into bowls and garnish with freshly chopped parsley, if desired. Serve hot and enjoy!
