Ingredients

  • 2 large Eggs
  • 2 slices Bread
  • 1 tablespoon Mayonnaise
  • 1 teaspoon Sriracha sauce
  • 1 tablespoon Butter
  • 1 slice Cheddar cheese
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Arugula
  • 1 teaspoon Olive oil

Directions

Step 1

In a small bowl, mix the mayonnaise and Sriracha sauce until well combined. Set aside.

Step 2

Heat a non-stick pan over medium heat and add the olive oil.

Step 3

Crack the eggs into the pan, keeping the yolks intact, and season with salt and black pepper. Fry for 2-3 minutes or until the whites are set and the edges are crispy.

Step 4

Flip the eggs carefully if you prefer over-easy eggs, and cook for an additional 1-2 minutes. Remove from pan and set aside on a plate.

Step 5

In the same pan, add butter and let it melt. Place both slices of bread in the pan and toast them until golden brown on one side, about 1 minute.

Step 6

Flip the bread slices over. Spread the mayonnaise-Sriracha mixture evenly on the golden-brown sides of the bread.

Step 7

Place the slice of cheddar cheese on one piece of bread, and let it melt slightly while the bread toasts on the other side.

Step 8

Top the cheese with the fried eggs and a handful of arugula. Place the second slice of bread on top, sauce side down.

Step 9

Gently press the sandwich with a spatula and cook for an additional 30 seconds to heat through.

Step 10

Remove the sandwich from the pan, slice it in half, and serve hot.
