Preheat your oven to 150°C (300°F) and line a baking sheet with parchment paper.
In a clean, grease-free mixing bowl, beat the egg whites with a hand or stand mixer until soft peaks form.
Gradually sift in the powdered sugar while continuing to beat, reserving approximately 3 tablespoons of the powdered sugar for later use. Beat until the meringue is glossy and holds stiff peaks.
Scoop out about 3 tablespoons of the meringue mixture and set it aside in a small bowl. This will be used later for the glaze.
Gently fold the ground almonds, cinnamon, and vanilla extract into the remaining meringue mixture until a sticky dough forms. Be careful not to deflate the meringue too much during this process.
Dust a clean surface with a light sprinkle of powdered sugar. Roll out the dough to a thickness of about 1 cm (just under 1/2 inch). To prevent sticking, you can lightly dust the rolling pin as well.

Bake the cookies in the preheated oven for 13-15 minutes, or until the glaze is set but still white. The cookies should remain soft inside and should not brown.
Allow the Zimtsterne to cool completely on the baking sheet before transferring them to an airtight container for storage.
