Ingredients

  • 3 large Egg whites
  • 250 grams Powdered sugar
  • 300 grams Ground almonds
  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon juice

Directions

Step 1

Preheat your oven to 150°C (300°F) and line a baking sheet with parchment paper.

In a clean, grease-free mixing bowl, beat the egg whites with a hand or stand mixer until soft peaks form.

Gradually sift in the powdered sugar while continuing to beat, reserving approximately 3 tablespoons of the powdered sugar for later use. Beat until the meringue is glossy and holds stiff peaks.

Step 4

Scoop out about 3 tablespoons of the meringue mixture and set it aside in a small bowl. This will be used later for the glaze.

Step 5

Gently fold the ground almonds, cinnamon, and vanilla extract into the remaining meringue mixture until a sticky dough forms. Be careful not to deflate the meringue too much during this process.
