Ingredients

  • 3 large Egg whites
  • 250 grams Powdered sugar
  • 300 grams Ground almonds (or almond meal)
  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, whip the egg whites with a pinch of salt until stiff peaks form.

Step 3

Gradually sift and fold the powdered sugar into the whipped egg whites, reserving about 3 tablespoons of the mixture for later use as the glaze.

Step 4

Mix the ground almonds, cinnamon, and vanilla extract into the meringue mixture until a slightly sticky dough forms. If the dough is too sticky, add a little more almond meal, a tablespoon at a time.

Step 5

Place the dough between two sheets of parchment paper and roll it out to a thickness of about 1 centimeter (1/3 inch).

Using a star-shaped cookie cutter, cut out cookies and carefully transfer them to the prepared baking sheets. Re-roll scraps as needed to make more cookies.
