Whether you’re a seasoned cook or a canning novice, this zucchini relish is a must-try for adding a zesty twist to your favorite dishes!
Wash and finely chop the zucchini, onions, red bell pepper, and green bell pepper. Alternatively, use a food processor to chop them into small, even pieces.
In a large mixing bowl, combine the chopped vegetables and sprinkle the salt evenly over them. Mix well and let the mixture sit for 2 hours to draw out excess moisture.
After 2 hours, transfer the mixture to a fine-mesh sieve or cheesecloth and rinse thoroughly under cold water to remove the salt. Squeeze out as much excess liquid as possible and set the vegetables aside.
In a large pot, combine the white vinegar, granulated sugar, mustard seeds, celery seeds, and turmeric powder. Bring the mixture to a boil over medium-high heat, stirring until the sugar is dissolved.
Add the prepared vegetable mixture to the pot and stir to combine. Reduce the heat to medium-low and simmer for 30 minutes, stirring occasionally.
While the relish is simmering, prepare your jars (if canning) by sterilizing them in boiling water and keeping them warm until needed.
Once the relish is cooked, carefully ladle it into the sterilized jars, leaving about 1/2 inch of headspace. Wipe the rims, seal with lids, and process the jars in a boiling water bath for 10 minutes if preserving for long-term storage.
Allow the jars to cool completely on a towel-lined surface. Check seals before storing. If not canning, cool the relish and transfer to airtight containers. Store in the refrigerator for up to 2 weeks.
Serve the zesty zucchini relish as a condiment or spread and enjoy!
