Ingredients

  • 4 cups zucchini
  • 2 cups onions
  • 1 cup red bell pepper
  • 1 cup green bell pepper
  • 2 tablespoons salt
  • 2.5 cups white vinegar
  • 1.5 cups granulated sugar
  • 1 tablespoon mustard seeds
  • 1 teaspoon celery seeds
  • 0.5 teaspoons turmeric powder

Directions

Step 1

Wash and finely chop the zucchini, onions, red bell pepper, and green bell pepper. Alternatively, use a food processor to chop them into small, even pieces.

In a large mixing bowl, combine the chopped vegetables and sprinkle the salt evenly over them. Mix well and let the mixture sit for 2 hours to draw out excess moisture.

After 2 hours, transfer the mixture to a fine-mesh sieve or cheesecloth and rinse thoroughly under cold water to remove the salt. Squeeze out as much excess liquid as possible and set the vegetables aside.

In a large pot, combine the white vinegar, granulated sugar, mustard seeds, celery seeds, and turmeric powder. Bring the mixture to a boil over medium-high heat, stirring until the sugar is dissolved.
