Ingredients

  • 250 grams Shrimp, peeled and deveined
  • 8 pieces Rice paper wrappers
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 2 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Fresh mint leaves, chopped
  • 4 leaves Romaine lettuce, torn into small pieces
  • 2 tablespoons Lime juice, freshly squeezed
  • 1 tablespoon Soy sauce
  • 1 teaspoon Honey
  • 1 clove Garlic, finely minced
  • 1 teaspoon Fresh ginger, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Sesame oil
  • 500 milliliters Warm water (for softening rice paper)

Directions

Step 1

Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes or until shrimp turn pink and opaque. Drain and set aside to cool.

Once the shrimp have cooled, chop them into bite-sized pieces and transfer to a mixing bowl.
