Ingredients

  • 250 grams penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 200 grams cherry tomatoes
  • 100 grams baby spinach
  • 1 teaspoon red chili flakes
  • 30 grams Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 10 grams fresh basil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

While the pasta is cooking, heat olive oil in a large skillet over medium heat.

Step 3

Finely chop the garlic cloves and add them to the skillet. Sauté the garlic for 1-2 minutes until fragrant, being cautious not to burn it.
