Ingredients

  • 500 g Ground beef
  • 1 large Egg
  • 100 g Breadcrumbs
  • 3 cloves Garlic, minced

  • 2 tbsp Olive oil
  • 1.5 liters Chicken broth
  • 2 medium Carrot, sliced
  • 2 stalks Celery, chopped
  • 3 stalks Scallions, sliced
  • 200 g Rice noodles
  • 2 tbsp Lime juice
  • 0.25 cup Fresh cilantro, chopped
  • 1 tbsp Sriracha (optional)

Directions

Step 1

In a large bowl, combine the ground beef, egg, breadcrumbs, 1 clove of minced garlic, 1/2 tbsp of grated ginger, soy sauce, salt, and black pepper. Mix until well combined.

Step 2

Form the mixture into small, bite-sized meatballs, about 1-inch in diameter, and set aside on a plate.

Step 3

Heat 1 tbsp of olive oil in a large pot over medium heat. Add the meatballs in batches, browning them on all sides (about 5 minutes per batch). Remove the meatballs and set aside.

In the same pot, heat the remaining 1 tbsp of olive oil. Add the remaining minced garlic, grated ginger, sliced carrots, and chopped celery. Sauté for 3-4 minutes until fragrant and the vegetables start to soften.
