Ingredients

  • 250 g Plain biscuits
  • 150 g Unsalted butter
  • 395 g Condensed milk
  • 3 whole Lemons
  • 100 g Sugar
  • 1 tbsp Gelatin powder
  • 60 ml Water

Directions

Step 1

Line an 8x8 inch square baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

Crush the plain biscuits into fine crumbs using a food processor or by placing them in a zip-lock bag and using a rolling pin.

Step 3

Melt the unsalted butter in a small saucepan over low heat, or in the microwave using short increments.

Step 4

In a mixing bowl, combine the biscuit crumbs and melted butter until well combined.

Step 5

Press the biscuit mixture firmly into the base of the prepared baking pan. Use the back of a spoon to evenly level it. Place it in the refrigerator to chill while you prepare the filling.

Zest one of the lemons and juice all three of them. You should have approximately 120ml of lemon juice.

In a small bowl, mix the gelatin powder with water and let it stand for a couple of minutes to bloom.

In a saucepan over medium heat, combine the condensed milk, sugar, lemon juice, and lemon zest.

Once the mixture is warm, add the bloomed gelatin, stirring continuously until the gelatin and sugar have dissolved completely.

Remove the saucepan from heat and allow the lemon mixture to cool for a few minutes.

Pour the cooled lemon mixture over the chilled biscuit base, spreading it evenly.

Return the pan to the refrigerator and allow it to set for at least 4 hours, or until firm.

Once set, lift the lemon slice out from the pan using the parchment paper overhang, and cut into 16 squares.

Serve chilled, and store any leftovers covered in the refrigerator.
