Ingredients

  • 12 oz rotini pasta
  • 1.5 cups cherry tomatoes
  • 1 large cucumber
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 1 cup black olives
  • 1 cup mozzarella cheese (cubed)
  • 1 cup pepperoni slices
  • 1 cup Italian dressing
  • 0.25 cup Parmesan cheese (grated)
  • 2 tbsp fresh parsley (chopped)
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente, about 8-10 minutes. Drain the pasta and rinse it under cold water to stop the cooking process.
