Ingredients

  • 2 medium Zucchini
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 large Red onion
  • 200 grams Cherry tomatoes
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 small Garlic cloves, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Wash and dry all vegetables. Cut the zucchini into 1/4-inch thick slices, the bell peppers into 1-inch wide strips, and the red onion into thick wedges. Leave the cherry tomatoes whole.

Step 2

In a large mixing bowl, prepare the marinade by whisking together olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and black pepper.

Step 3

Add the prepared vegetables to the bowl with the marinade. Toss everything thoroughly to ensure the veggies are evenly coated. Let them marinate for 20 minutes (optional for deeper flavor).

Step 4

Preheat your grill to medium-high heat. If using a grill pan, lightly grease it with olive oil.

Step 5

Place the vegetables directly on the grill grates or on a grill pan. Cook for 3–5 minutes per side, turning occasionally, until grill marks appear and the veggies are tender but still slightly crisp.

Step 6

Carefully remove the vegetables from the grill and transfer them to a serving platter.

Step 7

Garnish the grilled veggies with chopped fresh parsley before serving.

Step 8

Serve immediately as a side dish or pair with your favorite grain or protein.
