  • 2 cups baby spinach leaves
  • 0.25 cup fresh cilantro, chopped (optional)

Directions

Step 1

Heat olive oil in a large soup pot over medium heat.

Season the chicken breasts lightly with salt and pepper, then add them to the pot. Sear for 3-4 minutes on each side until golden brown. Remove and set aside.
