Ingredients

  • 2 pounds ground beef
  • 1 large (diced) yellow onion
  • 1 medium (diced) green bell pepper
  • 3 minced garlic cloves
  • 28 ounces canned crushed tomatoes
  • 15 ounces (drained and rinsed) canned kidney beans
  • 15 ounces (drained and rinsed) canned black beans
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons cayenne pepper (optional)
  • 2 tablespoons olive oil
  • 3 tablespoons (chopped) fresh cilantro (for garnish)
  • 1 cup shredded cheddar cheese (optional)
  • 0.5 cup sour cream (optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add 2 tablespoons of olive oil.

Step 2

Add the diced onion and green bell pepper to the pot and cook until softened, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the ground beef to the pot and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 7-8 minutes. Drain excess fat if necessary.

Step 5

Stir in the chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices.

Step 6

Pour in the crushed tomatoes, kidney beans, black beans, and beef broth. Stir until well combined.

Step 7

Bring the chili to a boil, then reduce the heat to low and let it simmer uncovered for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasonings if needed, adding more salt or spice as desired.

Step 9

Serve the chili hot, garnished with freshly chopped cilantro, shredded cheddar cheese, and a dollop of sour cream if desired. Enjoy!
