Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 medium zucchini

  • 1 teaspoon Italian seasoning
  • 2 cups cooked quinoa
  • 1.5 cups shredded cheddar cheese
  • 0.5 cups grated Parmesan cheese
  • 1 cup heavy cream
  • 0.5 cups bread crumbs
  • 1 tablespoon butter

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

Steam the broccoli and cauliflower florets for 5-7 minutes until they are tender but still crisp. Drain and set aside.

Slice the zucchini and carrots thinly. Dice the yellow onion and mince the garlic cloves.

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened, about 3-4 minutes.
