Ingredients

  • 12 pieces Manicotti shells
  • 14 ounces Extra-firm tofu
  • 5 cups Fresh spinach
  • 3 cloves Garlic
  • 0.25 cup Fresh basil
  • 0.25 cup Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Marinara sauce
  • 1 cup Vegan mozzarella cheese

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the manicotti shells according to the package directions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.

Step 3

In a large skillet over medium heat, add the olive oil. Sauté the garlic for 1-2 minutes until fragrant. Add the fresh spinach and cook until wilted. Remove from heat and let cool slightly.

Step 4

In a food processor, crumble the tofu and blend it with the sautéed spinach, nutritional yeast, lemon juice, fresh basil, salt, and black pepper until smooth and creamy. Adjust seasoning to taste.

Step 5

Transfer the tofu mixture to a piping bag or a large plastic bag with the corner snipped off.

Step 6

Carefully pipe the tofu mixture into each manicotti shell, being gentle to avoid breaking them.

Step 7

Spread 1 cup of marinara sauce evenly across the bottom of a 9x13-inch baking dish. Arrange the filled manicotti shells in a single layer on top of the sauce.

Step 8

Pour the remaining marinara sauce over the manicotti, ensuring all shells are fully covered.

Step 9

Sprinkle the vegan mozzarella cheese evenly over the top.

Step 10

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 11

Let the dish rest for 5 minutes before serving. Garnish with additional fresh basil if desired. Enjoy!
