Ingredients

  • 6 medium-sized fresh tomatoes (preferably Roma or plum tomatoes)
  • 1 medium-sized onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon granulated sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup vegetable broth or water
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Wash the tomatoes and make a small 'X' at the bottom of each tomato using a sharp knife. This will make peeling easier later.

Bring a pot of water to a boil and carefully place the tomatoes into the boiling water for about 30 seconds. Remove them with a slotted spoon and transfer to a bowl of ice water to cool.
