Ingredients

  • 8 oz Rice noodles
  • 1 lb Shrimp (peeled and deveined)
  • 3 tbsp Vegetable oil
  • 2 Eggs
  • 3 cloves Garlic (minced)
  • 2 cups Bean sprouts
  • 4 Green onions (sliced)
  • 1 cup Chopped roasted peanuts
  • 4 Lime wedges
  • 3 tbsp Soy sauce
  • 2 tbsp Tamarind paste
  • 3 tbsp Fish sauce
  • 2 tbsp Brown sugar
  • 1 tbsp Sriracha (optional)
  • 1 tbsp Water

Directions

Step 1

Soak the rice noodles in a bowl of warm water for about 10-15 minutes, or until softened. Drain and set aside.

Step 2

In a small bowl, whisk together soy sauce, tamarind paste, fish sauce, brown sugar, Sriracha (if using), and water to make the sauce. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and fully cooked. Remove from pan and set aside.

Step 4

In the same skillet, add another tablespoon of oil. Crack the eggs into the skillet and quickly scramble them until just set. Push the eggs to the side of the pan.

Add the remaining tablespoon of oil along with minced garlic. Sauté for 30 seconds until fragrant.
