Ingredients

  • 8 cups fresh kale
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves
  • 1 piece lemon
  • 0.5 teaspoons red chili flakes
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons water

Directions

Step 1

Wash the kale thoroughly under cold running water. Remove the tough stems by holding the stem in one hand and stripping the leaves off with the other hand. Tear or chop the kale leaves into bite-sized pieces and set aside.

Peel and mince the garlic cloves.

Step 3

Cut the lemon in half and set aside.

Step 4

Heat a large skillet or sauté pan over medium heat. Add the olive oil and allow it to warm for about 30 seconds.

Add the minced garlic to the pan and sauté for 30 to 60 seconds, stirring frequently, until fragrant but not browned.

Add the kale to the pan in batches, stirring each addition until it begins to wilt before adding more. Once all the kale is in the pan, add the water and cover it with a lid. Let it steam for 3 minutes.

Remove the lid and continue to cook, stirring occasionally, until the kale is tender and the water has evaporated, about 3 to 5 minutes.

Season the kale with salt, black pepper, and red chili flakes. Stir to combine.

Squeeze the juice of half the lemon over the kale and give it a final stir. Taste and adjust seasoning if needed.
