Ingredients

  • 500 grams All-purpose flour
  • 250 milliliters Milk
  • 7 grams Active dry yeast
  • 1 tablespoon Sugar
  • 2 teaspoons Salt
  • 70 grams Butter
  • 2 Eggs
  • 600 grams Potatoes
  • 1 medium Onion
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoons Black pepper
  • 1 Egg (for egg wash)

Directions

Step 1

Warm the milk to about 38°C (100°F). Stir in the active dry yeast and sugar. Let sit for 10 minutes until frothy.

Step 2

In a large mixing bowl, combine the all-purpose flour, salt, melted butter, and one egg. Pour in the yeast mixture and mix until a soft dough forms.

Step 3

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Place in an oiled bowl, cover with a kitchen towel, and let rise in a warm place for 1-1.5 hours or until doubled in size.

Step 4

While the dough is rising, peel and boil the potatoes in salted water until tender. Drain and mash the potatoes until smooth.

Step 5

Finely chop the onion and sauté it in the vegetable oil over medium heat until golden brown. Add the sautéed onion to the mashed potatoes along with black pepper and additional salt if needed. Mix well and let the filling cool.

Step 6

After the dough has risen, punch it down and divide it into 12 equal portions. Roll each portion into a ball.

Step 7

Flatten a dough ball into a small circle. Place a spoonful of the potato filling in the center, then fold the edges of the dough around the filling, pinching them shut to seal. Shape into an oval or round pie.

Step 8

Place the formed pies seam-side down on a baking sheet lined with parchment paper. Repeat with the remaining dough and filling.

Step 9

Cover the pies with a kitchen towel and let them rest for 20 minutes. Preheat your oven to 200°C (390°F).

Step 10

Beat the remaining egg and brush it over the tops of the pies for a shiny golden finish.

Step 11

Bake the pies for 18-22 minutes or until golden brown. Remove from the oven and let cool slightly before serving.

Step 12

Enjoy your Yummy Russian Potato Pies warm or at room temperature!
