Ingredients

  • 6 medium-sized potatoes
  • 3 cups mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 3 celery stalks
  • 1 small red onion
  • 2 tablespoons fresh parsley
  • 3 hard-boiled eggs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Directions

Step 1

Peel the potatoes and cut them into bite-sized chunks.

Step 2

Place the potatoes in a large pot, cover them with cold water, and add a pinch of salt. Bring to a boil over medium-high heat, then reduce the heat to a simmer. Cook for 12-15 minutes, or until the potatoes are fork-tender. Drain the potatoes and set them aside to cool.

Step 3

Meanwhile, dice the celery, chop the red onion finely, and roughly chop the parsley. Peel and chop the hard-boiled eggs into small chunks.

Step 4

In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and paprika. Stir until the dressing is well mixed.

Step 5

Add the cooled potatoes, celery, red onion, parsley, and chopped hard-boiled eggs to the bowl with the dressing. Gently fold the ingredients together until everything is evenly coated, being careful not to mash the potatoes.

Step 6

Taste and adjust seasoning as needed. You can add a bit more salt, pepper, or paprika to suit your preference.

Step 7

Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.

Step 8

Serve chilled and garnish with additional parsley or a sprinkle of paprika if desired.
