Ingredients

  • 2 cups long-grain parboiled rice

  • 2 garlic cloves
  • 1 teaspoon ginger (fresh)
  • 2 bay leaves
  • 1 teaspoon thyme (dried)
  • 0.5 teaspoon curry powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Rinse the rice under cold water until the water runs clear, then set it aside.

Blend the fresh tomatoes, red bell pepper, scotch bonnet pepper (if using), and half of the onion into a smooth puree. Set the blend aside.

Finely dice the remaining half of the onion, mince the garlic, and grate the ginger.

In a large pot, heat the vegetable oil over medium heat. Add the diced onions and sauté until they are soft and translucent, about 3–4 minutes.
