Ingredients

  • 6 large yellow onions
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon granulated sugar
  • 2 tablespoons all-purpose flour
  • 0.5 cup dry white wine
  • 8 cups beef stock
  • 2 bay leaves
  • 1 teaspoon fresh thyme
  • 1 loaf baguette
  • 2 cups (grated) Gruyère cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Slice the onions thinly into half-moons.

Step 2

In a large pot or Dutch oven, melt the butter and olive oil over medium heat.

Step 3

Add the onions to the pot and sauté for 10 minutes, stirring occasionally, until they start to soften.

Step 4

Sprinkle the onions with the sugar and a pinch of salt and continue cooking for about 25-30 minutes, stirring frequently, until the onions are deeply caramelized and golden brown.

Step 5

Add the flour to the pot and stir for about 2 minutes to coat the onions and cook off the raw flour taste.

Step 6

Deglaze the pot by pouring in the white wine and stirring to scrape up any browned bits from the bottom of the pot.

Step 7

Pour the beef stock into the pot and add the bay leaves and thyme. Stir to combine and bring the soup to a simmer.

Step 8

Reduce the heat to low and let the soup simmer gently for 20-25 minutes. Season with salt and pepper to taste.

Step 9

Meanwhile, preheat your oven's broiler. Slice the baguette into thick slices and place them on a baking sheet. Toast under the broiler for 1-2 minutes until golden, then flip and toast the other side.

Step 10

Ladle the soup into oven-safe bowls, leaving some space at the top. Place a slice or two of toasted baguette over each bowl of soup.

Step 11

Top the baguette slices with a generous handful of grated Gruyère cheese.

Step 12

Place the bowls on a baking sheet and broil them in the oven for 3-5 minutes, or until the cheese is melted, bubbly, and golden brown.

Step 13

Carefully remove the baking sheet from the oven and let the bowls cool slightly before serving.

Step 14

Serve the soup hot and enjoy the rich, comforting flavors of French Onion Soup.
