Ingredients

  • 2 pieces Chicken breast (boneless, skinless)
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion (diced)
  • 3 medium Carrots (sliced into rounds)
  • 3 pieces Celery stalks (sliced)
  • 4 cloves Garlic cloves (minced)
  • 8 cups Chicken broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 leaves Bay leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Egg noodles (optional)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper. Add them to the pot and sear for 4-5 minutes per side, until lightly browned. Remove and set aside.

In the same pot, add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
