Ingredients

  • 12 ounces fettuccine pasta
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic
  • 2 cups heavy cream
  • 1.5 cups Parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta water and drain the rest.

While the pasta cooks, season the chicken breasts with salt and black pepper on both sides.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside to rest. Slice into thin strips once cooled slightly.
